The Perfect Healthy Little Snack: Peanut Butter Energy Balls

If you’re like me, you love having a healthy, pre-made snack ready to go for any time you’re a little hungry or – let’s face it – just plain lazy.

My roommate introduced me to these fantastic little delights, what she calls Energy Balls. They’re the perfect little mix of protein (peanut butter and flaxseed), carbs (steel cut oats), and indulgence (chocolate chips).

Ingredients

  • 1lb./approximately 2 cups All Natural Peanut Butter (we get a great kind made at Publix)
  • 3/4 cup Steel Cut Oats
  • 1/2 cup Chocolate Chips
  • 1/8 cup Flaxseed
  • 4-5 tbs Honey

Note: These measurements are not exact. Change ingredients depending on taste (e.g. more honey for a little more moisture).

Directions

  • Mix all of the ingredients in a large mixing bowl.
  • Then roll into 1/2 inch balls (similar to how you’d roll out cookies) and place on a tray.
  • Cover and keep in refrigerator.
  • You can enjoy immediately, but Energy Balls are best served cold. Enjoy!
